I can’t tell you how many times I’ve made this for dinner parties in Paris. Persillade refers to a combination of minced fresh parsley and garlic that’s added to a dish near the end of the cooking. Rack of lamb is easy for entertaining, and the persillade gives it lots of flavor.

2 racks of lamb, Frenched

Good olive oil

1½ teaspoons kosher salt

½ teaspoon freshly ground black pepper

2 cups loosely packed fresh flat-leaf parsley leaves

1 tablespoon chopped garlic (3 cloves)

4 tablespoons (½ stick) unsalted butter, melted

1 cup fresh white bread crumbs

2 teaspoons grated lemon zest (2 lemons)
